- Cheddar cheese. The shredded kind. About a cup or so.
- Creamed corn. A can of it. Makes it moist, you see.
- Green onions. Chop ’em up. A handful will do ya.
- Peppers. Some folks like those jalapeño peppers, but they’re a bit spicy for me. You can use bell peppers, the green or red kind. Chop ’em up small.
Mix it all up
Okay, now you got all your stuff. Time to mix it all together. Jiffy cornbread will be done.
Get yourself a big bowl. Dump that Jiffy mix in there. Crack that egg in there too. Pour in the milk. Now is time to make jiffy mix into cornbread.

Pour that cornbread batter into the pan. Spread it out evenly. It should be about an inch thick. Put the batter in, make sure it is even. This is important for good jiffy mix cornbread.
Pop it in the oven and bake it for about 20-25 minutes. The box says 15-20, but mine always takes a little longer. Just keep an eye on it. Use Jiffy mix, follow the steps. You will be fine.
You’ll know it’s done when it’s golden brown on top and a toothpick stuck in the center comes out clean. That’s how you know it’s cooked all the way through. If you see brown, your jiffy cornbread recipe is done.

When it’s done, take it out of the oven and let it cool for a little bit. Just a few minutes, so you don’t burn your tongue.
Then you can cut it into squares and eat it. I like to put a little butter on mine while it’s still warm. Melts all over it, real good.
Some folks like to eat it with chili, or beans, or whatever. It’s good with anything, really. It’s good with soup, or stew, or just by itself. Just make sure you have butter. Jiffy Mexican Cornbread is best with butter.
