Okay, so I saw this recipe floating around for a 4-ingredient lemon cream cheese dump cake and thought, “No way, that’s gotta be too good to be true.” But I was feeling lazy and had a serious lemon craving, so I decided to give it a shot. Spoiler alert: it’s ridiculously easy and surprisingly delicious!
Getting Started
First, I grabbed my ingredients. Seriously, just four things:
- One box of lemon cake mix (I used the one with the little pudding packet inside, but I think any would work)
- One can of lemon pie filling.
- One block (8 ounces) of cream cheese, softened. Make sure it’s soft, otherwise, you’ll have lumps! I took mine out of the fridge hours before.
- Half a cup (one stick) of butter, melted.
The “Dumping” Process
Next, I preheated my oven to 350°F (175°C). Then I took a 9×13 inch baking dish. No need to grease it, which is a win in my book.
I spread the lemon pie filling on the bottom of the dish like an elementary school kid. It doesn’t have to be perfect, just get it evenly(ish) distributed.
Then, I took my softened cream cheese and dropped spoonfuls of it all over the pie filling. Again, no need for perfection, just plop it on there.
Next, I sprinkled the dry cake mix evenly over the top of everything. Try to cover most of the cream cheese and pie filling. It’s okay if some peeks through.
Finally, I poured the melted butter as evenly as I could over the cake mix. Some spots might look a little dry, but don’t worry, it all works out in the oven.
Bake and Enjoy!
I popped the dish into the preheated oven and baked it for about 40-45 minutes. You want the top to be golden brown and bubbly. Mine took closer to 45 minutes, but ovens can vary, so just keep an eye on it.
I let it cool for a little bit before I dug in. It’s amazing warm, but also delicious at room temperature. You can even serve it with a scoop of vanilla ice cream or whipped cream, you know, treat yourself. I kept it plain and simple.
Honestly, this is the perfect dessert when you’re short on time (or energy!). It’s sweet, tart, creamy, and that buttery cake topping is just, it does the job. I’m definitely making this again!
