Okay, so today I tried making a homemade chicken pot pie, but with a twist – I used crescent rolls for the crust. Let me tell you, it turned out pretty darn good!

Getting Started

First off, I gathered all my ingredients. I already had some leftover rotisserie chicken, which was perfect. Then I grabbed some mixed veggies from the freezer, some cream of chicken soup, milk, and of course, the crescent rolls. Oh, and some spices – you know, the usual, salt, pepper, garlic powder.

Cooking the Filling

I started by shredding the chicken. Then, in a big ol’ pot, I dumped in the veggies and let them thaw a bit. Once they were mostly thawed, I threw in the shredded chicken and poured in the soup and milk. I stirred it all together and let it simmer for a little while, just enough to get everything heated through and the sauce thickened a bit. I sprinkled in the spices and gave it another good stir.

Assembling the Pie

Now for the fun part! I preheated my oven to 375°F. Then, I unrolled the crescent roll dough. Instead of separating them into triangles, I kept them in two big rectangles. I pressed one rectangle into the bottom of a greased baking dish. It was like a puzzle, but I managed to cover the whole bottom. Then I poured the chicken mixture over the dough. After that, I laid the other dough rectangle on top and pinched the edges to seal it. I also poked a few holes in the top to let the steam escape.

Baking and Enjoying

I popped the dish into the oven and baked it for about 20-25 minutes. You want the crust to be golden brown and the filling to be bubbly. Once it was done, I pulled it out and let it cool for a few minutes before digging in.

The verdict? It was delicious! The crescent roll crust was buttery and flaky, and the filling was creamy and flavorful. It was a super easy and satisfying meal. Definitely a winner in my book!

  • Tip 1: You can use any kind of cooked chicken for this recipe. Leftover roast chicken, boiled chicken, whatever you have on hand.
  • Tip 2: Feel free to switch up the veggies. Peas, carrots, corn, green beans – it’s all good!
  • Tip 3: If you want a thicker sauce, you can add a little cornstarch slurry before simmering.

And that’s it! A simple, delicious homemade chicken pot pie with crescent rolls. Give it a try, and let me know what you think!
