Okay, here’s my blog post about making gluten-free Mexican wedding cookies:

So, I’ve been trying to cut back on gluten, and let me tell you, it’s tough! Especially when it comes to baked goods. I love cookies. I saw a thing on the Internet about Mexican wedding cookies, those little powdery, nutty balls of deliciousness. I thought, “I gotta try making a gluten-free version.”

First, I gathered my ingredients. This was a little tricky because, you know, gluten-free baking can be a bit of a science experiment. I used a blend of almond flour and tapioca starch, I found it at my local shop. I also needed some powdered sugar, butter (I used regular, but you could use vegan butter, I guess), vanilla extract, and some chopped pecans. I had those in my home.

Mixing it Up

I started by creaming together the softened butter and some of the powdered sugar. I just used a regular hand mixer, nothing fancy. Then, I slowly added in the almond flour and tapioca starch mixture. It got pretty crumbly, which, honestly, I was a little worried about at first.

Next, I stirred in the vanilla and the chopped pecans. I love pecans, so I probably put in a little extra. Don’t judge!

Baking Time!

Okay, so this is where things got interesting. I rolled the dough into these little balls, about an inch or so. I placed them on a baking sheet that I’d lined with parchment paper (because nobody wants to scrub cookie sheets, am I right?).

I baked them in a preheated oven at, like, 350 degrees Fahrenheit. It took about 12 minutes, maybe a little longer. You want them to be just lightly golden brown on the bottom.

The Finishing Touch

Once they were out of the oven and cooled a bit (but still warm!), I rolled them in more powdered sugar. This is what gives them that classic look and that melt-in-your-mouth texture.

  • Make the dough.
  • Roll and put the ball on oven tray.
  • Put the oven tray in the oven.
  • Wait until it’s done.

Seriously, these things were GOOD. Even my gluten-loving friends were impressed. They’re crumbly, nutty, and just sweet enough. Perfect with a cup of tea or coffee. I’ll definitely be making these again!
