Okay, so today I wanted to do something a little different in the kitchen. I’ve been craving something sweet but also kinda refreshing, you know? So I thought, why not bake some muffins? But not just any muffins – lemon poppy seed and blueberry muffins! Sounds fancy, but it’s actually pretty chill to make.
First things first, I gathered all my stuff. Flour, sugar, eggs, the usual suspects. Then the stars of the show: lemons, poppy seeds, and a whole bunch of blueberries. I made sure my oven was heating up to like, 400 degrees, and got a muffin tin all ready with those little paper liners.
Mixing the batter was kinda therapeutic, I won’t lie. I started with the dry ingredients – flour, sugar, a pinch of salt, and those tiny poppy seeds. They add a nice little crunch, which I love. Then, in a separate bowl, I mixed the wet stuff – melted butter, eggs, milk, and a good squeeze of lemon juice. Zested the lemon too for that extra zing.

I scooped the batter into the muffin liners, filling them up almost to the top. Popped them in the oven and waited. It felt like forever, but it was probably around 20-25 minutes. The smell that filled my kitchen? Amazing. Like, seriously amazing. You could smell the lemon and blueberries, it was like a little bakery in here.
Once they were done, I took them out and let them cool off for a bit. It was tough not to dig in right away, but I managed. When they were cool enough to handle, I took one out, broke it open, and wow. Moist, fluffy, with just the right amount of sweetness and that tangy lemon flavor. The blueberries were all juicy and bursting with flavor. Honestly, they turned out better than I expected. It was my first time making this type of muffins. Perfect for a little treat, or even breakfast, why not?
