Okay, so yesterday I decided to make fish tacos with mango salsa and slaw. I’ve been craving them for a while, and I finally had all the ingredients.

Getting Started

First, I gathered everything. I had some nice cod fillets, which I prefer for fish tacos. For the slaw, I grabbed a bag of pre-shredded coleslaw mix – saves so much time! Then, for the mango salsa, I needed, well, mangoes, obviously. I also picked up some red onion, cilantro, a jalapeño, and a lime.

Making the Mango Salsa

I started with the salsa because I wanted the flavors to meld. I diced the mangoes, red onion, and jalapeño pretty finely. I’m not a huge fan of giant chunks in my salsa. Then I chopped up a bunch of cilantro and threw it all in a bowl. I squeezed the juice of a lime over everything and added a little salt. Stirred it all up, tasted it, and it was perfect. Into the fridge it went.

Prepping the Slaw

The slaw was super easy. I just dumped the coleslaw mix into a bowl. For the dressing, I whisked together some mayo, a little bit of apple cider vinegar, a touch of honey, and some salt and pepper. You could totally use a store-bought dressing, but I like making my own. I poured the dressing over the slaw and mixed it all together. Done! That also went into the fridge.

Cooking the Fish

Now for the fish. I patted the cod fillets dry with paper towels – this helps them get nice and crispy. I seasoned them simply with salt, pepper, and a little bit of chili powder. You could use any seasoning you like, really. I heated up some oil in a pan over medium-high heat. Once it was hot, I added the fish and cooked it for about 3-4 minutes per side, until it was cooked through and flaky. It browned up really nicely.

Assembling the Tacos

Finally, time to assemble! I warmed up some corn tortillas – I just flipped them over an open flame on my gas stove for a few seconds per side. You could also use flour tortillas, whatever you prefer. Then I broke up the fish into chunks and put it in the tortillas. I topped it with a generous spoonful of the mango salsa and a good helping of the slaw.

The Final Result

Oh man, they were so good! The fish was flaky and flavorful, the mango salsa was sweet and tangy, and the slaw added a nice creamy crunch. It was the perfect combination. Seriously, you have to try this. It’s easier than you think, and the result is amazing. I devoured like three of them in one sitting, don’t even judge me. It’s one of my all-time favorite meals, will definetly cook it again.
