Hey everyone, it’s your boy back again with another kitchen adventure! Today, I tried to make something sweet and simple—strawberry cookies, but with a little twist. I decided to use a cake mix because, why not? It seemed easier, and I was all in for a lazy Sunday baking session.

So, I grabbed a box of strawberry cake mix from my pantry. I also pulled out some eggs, vegetable oil, and that was pretty much it for the must-haves. I did see some folks online adding Jell-O mix and vanilla pudding to the mix, but I stuck to the basics. Less is more, right?

Getting Started

  • First off, I preheated my oven to 350°F. Gotta get that thing hot and ready!

  • Next, I poured in half a cup of vegetable oil. You could use melted butter, but I went with oil ’cause it’s what I had.
  • I mixed everything with a big spoon. No fancy mixers or anything—just good old elbow grease. It turned into this sticky, pink dough pretty quickly.

Baking Time

  • I scooped out little balls of dough and placed them on a baking sheet lined with parchment paper. I made sure to leave some space between each because I didn’t want them merging into one giant cookie.
  • Now, for the actual baking, I popped the sheet into the oven and set a timer for about 10 minutes. Some people said to bake them for a bit longer, but I was feeling experimental. I wanted them extra soft, so I thought pulling them out a bit early would do the trick.

After 10 minutes, I took them out. They looked a little underdone but still pretty good. I let them cool on the sheet for a few minutes before moving them to a wire rack to cool completely. They firmed up as they cooled, which was cool to see.

I tasted one (or maybe a few) while they were still a bit warm. They were soft, chewy, and had a nice strawberry flavor. Not too strong, but definitely there. I think they turned out pretty decent for such a simple recipe. I saw some recipes suggesting to add a sprinkle of powdered sugar or a drizzle of melted chocolate, maybe I will try next time.

So, that was my little baking experiment for the day. Using a cake mix to make cookies is definitely a shortcut worth trying.
