Okay, guys, today I tried making some easy no-bake pies, and let me tell you, it was quite the adventure. I’m not much of a baker, but it was a hot day, and I wanted something sweet without turning on my oven. So, I decided to make these pies with a graham cracker crust.

First off, I gathered all my ingredients. For the crust, I needed graham crackers, some sugar, and melted butter. I smashed the graham crackers into crumbs. You can use a food processor, but I just put them in a bag and whacked them with a rolling pin. It was a good stress reliever. I mixed the crumbs with the sugar and melted butter until it looked like wet sand. Pretty straightforward, right?

Then, I pressed this mixture into my pie tins. I used these small, individual-sized tins because they’re cute and I’m between the ages of 13 and 18, you know? Made sure the crust was evenly spread and went a bit up the sides. Then, I put the crusts in the fridge to chill while I worked on the fillings.

For the fillings, I wanted to try a couple of different flavors. I made a simple chocolate one and a lemony one.

  • Chocolate Filling: This was basically just cream cheese, powdered sugar, cocoa powder, and some melted chocolate. I beat the cream cheese until it was smooth, then added the other ingredients. It got really creamy and rich, just how I like it.
  • Lemon Filling: This one was a bit trickier. I mixed cream cheese with powdered sugar, lemon zest, and lemon juice. I also added a bit of whipped cream to make it lighter. It took some time to get the right balance of sweet and tart, but I think I nailed it in the end.

Once the fillings were ready, I took the crusts out of the fridge and filled them up. I smoothed the tops with a spatula to make them look nice and even. Then, back into the fridge they went to set for a few hours. That was the hardest part, waiting for them to chill!

Finally, after what felt like forever, the pies were ready. I took them out, and they looked pretty good, if I do say so myself. The crust was firm, and the fillings were set but still creamy. I tasted a bit of each, and they were delicious! The chocolate one was super rich and decadent, and the lemon one was refreshing and tangy. These no-bake pies are definitely a win, especially for a hot summer day when you don’t want to use the oven.

I ended up making a couple more because, hey, why not? I even tried a different one with crushed cookies instead of graham crackers, and it worked out great. This whole no-bake pie thing is pretty easy and fun, and you can get creative with the fillings. I’m already thinking of what flavor to try next. Maybe something with berries? We’ll see!
