My Go-To Chicken Salad

Now, for the dressing, I kept it simple with some mayo, about half a cup. I also squeezed in some lemon juice, just a bit, to brighten things up. A dash of salt and pepper, and that was it for the dressing.
- Mix in 1/2 cup of mayonnaise
- Squeeze in a bit of lemon juice
- Season with salt and pepper
I mixed everything together, making sure the chicken was well coated. I let it sit in the fridge for like, 30 minutes, just to let the flavors mingle a bit. When it was time to eat, I scooped some of that delicious salad onto some whole-grain bread, but you can use whatever you like, even lettuce wraps if you’re cutting carbs.
