Okay, so I’ve been trying to be a bit healthier lately, and that includes finding some yummy treats that won’t totally derail my progress. I stumbled upon these “Weight Watchers” muffins and, let me tell you, the name is deceiving. They’re actually GOOD. Like, really good. And pretty simple to whip up, which is a major win in my book.
Getting Started
First, I gathered all my ingredients. You know, the usual suspects for muffins: flour, baking soda, baking powder, salt… But here’s where it gets interesting: we’re using pumpkin puree (not pumpkin pie filling – big difference!) and chocolate chips. I also added some pumpkin pie spice because, why not? It’s fall, after all!
I also made sure that I prepared my muffin baking pan, I used some paper liners.

Mixing It All Up
I started by whisking together the dry ingredients in a big bowl. Flour, baking soda, baking powder, salt, and that pumpkin pie spice. In a separate bowl, I mixed the wet ingredients: the pumpkin puree, some sugar (I used a little less than the recipe called for, trying to be good!), an egg, and a splash of vanilla extract.
Then, the important part: I poured the wet ingredients into the dry ingredients and stirred everything together. You don’t want to overmix it, just until it’s all combined. Finally, I folded in the chocolate chips. Because, chocolate.
Bake time!
I filled each muffin cup about two-thirds full. I didn’t want them overflowing and making a mess in my oven.
- I preheated the oven to 375°F.
- The muffins baked in the preheated oven.
- It took my oven 25 minutes.
A toothpick inserted into the center came out clean, so they are done!
The Final Result (and Taste Test!)
I let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Honestly, it was hard to wait. They smelled amazing!
And the verdict? These muffins are delicious! They’re moist, pumpkin-y, and have just the right amount of chocolate. I’m definitely adding these to my regular rotation of “healthy-ish” treats. I feel like I cheated the system somehow, but I’ll take it!.
