Hey everyone! So, I’ve been trying to eat a bit healthier lately, but I still crave something sweet in the morning. I found this idea online for banana and blueberry oatmeal cookies, and thought, why not give it a shot? They sounded easy enough, and I already had most of the stuff at home.

First, I grabbed a couple of really ripe bananas – the ones that are all spotty and brown, you know? I mashed those up in a big bowl until they were all mushy. Then, I dumped in some rolled oats. I think I used about a cup and a half, but I just kind of eyeballed it until the mixture looked thick enough.

Next, I added in a good scoop of almond butter – maybe half a cup? I love that stuff! It added a good nutty flavor and I guess helped to hold everything together. I threw in a handful of fresh blueberries. They were so juicy and I just love the color they give. Then I mixed everything together. It was kind of messy, but that’s okay! It got my hands dirty, but I licked my finger once or twice, that banana and almond butter mix is really the deal!

    Ingredients I used:

  • 2 ripe bananas
  • About 1.5 cups of rolled oats
  • 1/2 cup of almond butter
  • A handful of fresh blueberries

I preheated my oven to, I think it was 350 degrees. While that was heating up, I lined a baking sheet with some parchment paper. Then I scooped out little mounds of the cookie dough onto the sheet. They weren’t perfectly round or anything, just little blobs.

I popped the baking sheet into the oven and baked them for maybe 15-20 minutes? I just kept an eye on them until they were golden brown around the edges. When they were done, I took them out and let them cool for a bit.

And that’s it! They were super easy to make, and they actually tasted pretty good! They’re not super sweet like regular cookies, but they’re definitely a nice, healthy treat. They fill you up, too. I ate a couple for breakfast with my coffee, and it was a perfect start to my day. I might try adding some cinnamon or maybe some chopped nuts next time. I’ll definitely be making these again!
