Okay, so the other day I was making a cake for my niece’s birthday, and the frosting recipe I was using called for meringue powder. I looked in my pantry, and guess what? I was all out! I didn’t want to run to the store, so I thought, “There’s gotta be a good substitute, right?”
My Little Kitchen Experiment
First, I remembered my grandma always kept a carton of egg whites, that she made with cream of tartar to stabilize them. I thought, “Hmm, maybe that would work?” So, I grabbed my phone and started searching.
I found a few different options, it seemed like a lot of people were in the same boat as me at some point. Here’s what I considered:

- Dried Egg Whites: Apparently, these are pretty similar to meringue powder.
- Fresh Egg Whites: Seemed like a classic choice, I decided to use them.
- Cream of Tartar: Not a substitute by itself.
- Lemon Juice or Vinegar: I read that a tiny bit could stabilize the egg whites, so I add some.
My Attempts.
I whipped up some fresh egg whites, adding a pinch of cream of tartar. I gradually added the powdered sugar, just like the recipe said, and kept beating it. It looked about right, maybe a little less stiff than usual, but it seemed okay.
I tried the cream of tartar method first. It worked, kinda, but the frosting was a bit…runny. It wasn’t holding its shape very well. Definitely not good for piping those cute little flowers I was planning!
The Solution That Saved the Day
I whisked everything together, and…it worked! The frosting was smooth, glossy, and held its shape perfectly. I was so relieved! I could finally decorate the cake without worrying about the frosting melting into a puddle.
So, if you ever find yourself out of meringue powder, don’t panic! Fresh egg whites can be a great alternative. Just remember to add it, and you might just save your baking day like I did!
