Okay, so I’ve been messing around in the kitchen again, and let me tell you, I stumbled upon something pretty darn good. I was craving something sweet but didn’t want to go through a whole ordeal, you know? So, I thought, why not try making something with just a couple of ingredients? And that’s how I ended up with these angel food cake mix lemon pie filling bars. Seriously, they’re so easy, it’s almost ridiculous.
First off, I grabbed a box of angel food cake mix – the one-step kind, ’cause who needs extra steps, right? Then, I got a can of lemon pie filling. Now, the can I had was about 15.75 ounces, but I heard some folks use a bigger one, like 22 ounces. I didn’t have that, and I felt like it needed a bit more oomph, so I just squeezed in a couple of tablespoons of lemon juice to make up for it. Worked like a charm!
Next, I just dumped the cake mix and the pie filling into a big bowl. Gave it a good stir until it was all combined and looked kinda like a thick, lemony batter. Oh, and that lemon juice I added? Really made the lemon flavor pop.

After that, I poured the whole mixture into a greased baking pan. I used a 9×13 inch one, but you do you. Popped it in the oven, which I had already preheated to 350 degrees Fahrenheit, and let it bake. It took about 25-30 minutes, but I just kept an eye on it until the top turned a nice golden brown and a toothpick came out clean.
Once it was done, I let it cool down for a bit. Patience is not my strong suit, especially when there’s something sweet and lemony waiting for me. After a few minutes, I cut them into squares – or bars, I guess – and dug in.
The Result

- Taste: Sweet, with a strong, tangy lemon flavor. That extra lemon juice really did the trick. It’s like a lemon bar and angel food cake had a baby.
Honestly, these things are dangerously easy to make. And eat. I might have had more than a few. Don’t judge me. They’re just that good.
