Okay, guys, let’s talk about these banana pudding cookies I made the other day. I wanted something sweet, but I was also feeling kinda lazy. So I thought, why not try making cookies with a cake mix? It sounded easy enough, and I’m all about easy recipes.
First, I grabbed a box of yellow cake mix from the pantry. I also got some instant banana cream pudding mix, because banana pudding is awesome, right? And of course, I needed the usual stuff like eggs and oil. Oh, and some vanilla wafers ’cause what’s banana pudding without them?
I dumped the cake mix and the pudding mix into a big bowl. Then, I cracked in two eggs and poured in some vegetable oil. I used a hand mixer to blend it all together until it was nice and smooth. It did get a little thick, almost like playdough but don’t panic, keep mixing.

Next, I crushed up a bunch of vanilla wafers. I just put them in a bag and smashed them with a rolling pin. It was kinda fun, actually, a good way to get out some frustration. Then I stirred those crushed wafers into the cookie dough. Fold them in gently, don’t use the hand mixer for this part.
Baking Time!
I preheated my oven to 350 degrees. While it was heating up, I lined a baking sheet with parchment paper. Then I scooped out the dough onto the sheet, leaving some space between each cookie. They were looking pretty good already!
- I popped them in the oven and set the timer for about 10-12 minutes.
- I kept an eye on them, and when the edges started to turn golden brown, I knew they were done.
After I took them out of the oven, I let them cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely. They smelled amazing, like a mix of banana and vanilla. And they tasted even better! They were soft and chewy, with a nice little crunch from the wafers. Seriously, they were gone in like a day. My family loved them! And all I used is a boxed cake mix! This is the way to go!
