Okay, so I’ve been on this baking kick lately, and I’ve been trying out all sorts of different mixes. Today’s experiment: Jiffy muffin mix! Specifically, I wanted to see just how many muffins I could squeeze out of one of those little boxes.

Getting Started

First things first, I grabbed a box of the Jiffy corn muffin mix – the classic, you know? I also made sure I had the other stuff it calls for: one egg and 1/3 cup of milk. Super simple.

I preheated my oven to 400 degrees Fahrenheit, like the box says. While that was warming up, I greased a standard 12-cup muffin tin. I’m not a huge fan of paper liners, but you do you.

Mixing it Up

Next, I dumped the mix into a bowl, added the egg and milk, and stirred it all together. The box says not to overmix, so I just mixed it until everything was combined. It looked a little lumpy, but that’s okay.

Filling the Cups

Now for the fun part! I started spooning the batter into the muffin tin. I was curious to see if I could get a full dozen, or if it would be more like a half-dozen situation. I filled each cup about 2/3 full, which is what I usually do for muffins.

The Bake

I popped the tin into the oven and set a timer for 15 minutes, box instructions say 15-20 minites. I always check at the lower time.

  • After 15 minutes baking, I checked it with toothpick, it came out wet.
  • I add another 3 minutes. Still wet.
  • Add another 2 minutes, finally, toothpick came out clean! Total 20 minutes.

The Results!

My box of Jiffy muffin mix made…wait for it…six regular-sized muffins! I was a bit surprised, to be honest. I thought it might make more. But hey, six perfectly golden-brown, delicious-smelling muffins is still a win in my book!

So, there you have it. One little box, six muffins. Next time, I might try adding some blueberries or chocolate chips to the mix to spice things up a bit. But for a basic, no-frills muffin, Jiffy gets the job done!
