Okay, so today I tried making fry bread without baking powder, and let me tell you, it was quite the adventure. I started off all confident, thinking, “How hard can it be?” Turns out, it’s not just about throwing stuff in a bowl and hoping for the best.
First off, I gathered my ingredients. I used just flour, salt, sugar, and warm water. Yep, that’s it. I dumped the flour, salt, and sugar into a big bowl and mixed them up real good. Then, I slowly added the warm water, stirring it all together. I gotta say, it felt weird not putting in any baking powder. It’s like, is this even going to work?
After mixing, I had this sticky dough. I kneaded it for a bit on a floured surface, just like I saw in some old cooking videos. It was messy, I won’t lie. Dough was sticking to my hands, the counter, everywhere. But I kept at it, kneading until it felt kinda smooth. I could tell I didn’t work the dough too much, and I probably should have let it rest a bit, maybe 15-20 minutes, but I got impatient.
The Frying Part
Next up, the frying. I heated up some vegetable oil in a pan. Now, here’s where I messed up a bit. I didn’t check the oil temperature. It should’ve been around 350 degrees, I think. I just eyeballed it, and that was probably a mistake. I also wondered if I used old flour, maybe it would work better. Anyway, I divided the dough into small pieces and flattened them out.
I tossed the first piece into the hot oil, and it started to bubble and puff up. It was a bit pale, though. I guess the oil wasn’t hot enough. I turned up the heat a little and tried again. The next one came out a bit better, golden and crispy.
