Alright, so I’ve been messing around in the kitchen again, and this time I decided to tackle something that sounded way harder than it actually is – marshmallow fluff. You know, that gooey, sweet stuff that’s perfect for, well, just about anything? Turns out, making it with regular marshmallows is a breeze. Here’s how I did it.
First off, I grabbed a bag of those big, fluffy marshmallows from the store. I mean, you can’t have marshmallow fluff without marshmallows, right? Then, I raided the pantry for some other basics – corn syrup, sugar, vanilla extract, and egg whites. Oh, and I almost forgot, a pinch of cream of tartar. Apparently, it helps keep things stable or something.
So, I dumped the marshmallows into a big ol’ pot and started melting them down over low heat. Stirring constantly, mind you. It took a bit, but they eventually turned into this gooey mess. Then, I whipped up a simple syrup with the corn syrup and sugar, just heating them together until the sugar all dissolved. Easy peasy.

In a separate bowl, I whisked those egg whites with the cream of tartar until they got all frothy. It’s kind of satisfying, watching them transform like that. Once the syrup was ready, I slowly poured it into the egg whites while still whisking away. It started to look like fluff right then and there!
Now, here’s the fun part. I poured that melted marshmallow goo into the egg white mixture and kept on mixing. The whole thing started to get thicker and fluffier by the second. I added a splash of vanilla extract for flavor, because why not? Vanilla makes everything better.
I kept mixing until it was all smooth and glossy, and the consistency was just right – you know, like the fluff you buy in stores, but better, ’cause it’s homemade! Honestly, the whole process was way easier than I thought it would be. It took a little time, sure, but most of it was just stirring and watching stuff melt and mix.
What I Ended Up With

- A sense of accomplishment, because I made something that seemed complicated but totally wasn’t.
