Well, let me tell you, these s’mores cookie bars, they somethin’ else. You use that premade cookie dough, the kind you just buy at the store. Makes it real easy, you see. Ain’t nobody got time to be makin’ dough from scratch every time they want a treat, right?
Now, I heard some folks, they like to put that dough in the icebox for a bit. They say it makes it, uh, firmer? Yeah, firmer. And that makes it bake up different, more like a cake. I reckon you could do that if you want. Me? I just slap it in the pan and bake it. Ain’t nothin’ wrong with a little gooey, I always say. And if it’s real gooey, just crack another egg in there. Eggs fix everything.
These s’mores things, they got that chocolate and them marshmallow things, right? Just like them s’mores you make over a fire. But with these cookie bars, you just bake ’em in the oven. Easier than buildin’ a fire, that’s for sure. You can use any kind of chocolate. I like them Hershey bars the best. They melt up real nice.

Oh, and them cracker things, graham crackers. They go in there too. Crunchy and sweet, they are. I like to break ’em up, put ’em right in the dough. Some folks, they like to put ’em on top. You do what you like, I reckon. There ain’t no right or wrong way to make these things. Cept you gotta bake ’em. Can’t eat raw cookie dough, less you wanna get a tummy ache. That what my mama always told me, anyways.
Now, I seen some folks, they put all sorts of fancy stuff in these s’mores cookie bars. They put that, uh, Nutella stuff in there. It’s like chocolate, but, uh, different. I don’t know. I reckon it’s alright. I just like regular chocolate. Then they put fruit and all in there! Bananas and strawberries and them little red berries. I don’t put fruit in my cookies. But, like I said, you do you.
These cookie bars, they a real treat. Easy to make, too. Even if you ain’t no fancy baker, you can make these. Just gotta follow the directions on the premade cookie dough. Or, you know, just wing it. That’s what I do. It ain’t rocket science, bakin’ cookies.
I remember one time, I tried to make ’em with them vanilla wafers. You know, them little round cookies? Well, it was alright. But it weren’t the same. I think you need that graham cracker in there to make it a real s’more. But like I said, you can try all sorts of things. Some folks use chocolate chip cookies! Can you imagine? Cookies on cookies! It’s a bit much if you ask me.

Just your cookie dough, your chocolate, your marshmallows, and your graham crackers. That’s it. You probably got all that stuff in your kitchen right now. Unless you don’t eat cookies. And if you don’t eat cookies, well, I don’t know what to tell ya. You’re missin’ out!
I first got wind of these s’mores cookie bars from a cookbook. Can’t recall the name right now. But this fella, he wrote a whole book ’bout peanut butter. Now, I love peanut butter, but a whole book? Anyways, he had this recipe in there for somethin’ similar. I just took out the peanut butter, ’cause, you know, this is s’mores, not peanut butter s’mores. Though, that might be good too. Maybe I’ll try that next time.
You ever tried makin’ these with them shortbread cookies? Them buttery ones? They’re pretty good, too. A little more, uh, substantial, I guess you’d say. They hold up real good to the heat. Don’t get all crumbly like some cookies. But then again, crumbly ain’t always bad. Sometimes you want a cookie that just melts in your mouth, you know?
Now you got your basic s’mores, you need them Hershey bars. That’s what my mama always used, that’s what I use. You can use them other chocolates, but it ain’t the same. Then you need them Jet-puffed marshmallows. Them big fluffy ones. Don’t get them little bitty ones, they just disappear when you bake ’em. And of course, you need them graham crackers. Can’t have s’mores without graham crackers. It’s like, a rule or somethin’.

And don’t forget to let ’em cool a bit before you eat ’em. They’ll be hot comin’ out of the oven. You don’t wanna burn your tongue. Learned that the hard way, I did. Many times. But I never learn. I always gotta have a bite right away. Can’t help myself. They just smell so good!
These s’mores cookie bars, they a real crowd pleaser, too. You take ’em to a potluck, and they’ll be gone in a jiffy. Everybody loves ’em. Kids, grownups, even that old grump Mr. Johnson down the street. He loves ’em. Though he’d never admit it. He pretends he don’t like sweets. But I seen him sneakin’ a second one when he thought nobody was lookin’.
