Okay, so I saw this recipe online for 3-ingredient pumpkin chocolate chip muffins, and I thought, “No way, that can’t be good.” But, you know, I had to try it. I mean, how can you mess up something with only three ingredients, right? I grabbed the stuff I needed:
- a box of spice cake mix
- a can of pumpkin puree
- a bag of chocolate chips
First things first, I preheated my oven to 350 degrees. While that was warming up, I dumped the cake mix and the pumpkin puree into a big bowl. I started mixing them together, and let me tell you, it got thick fast.
Then, I added in the chocolate chips. Now, the recipe I saw didn’t say how much, so I just eyeballed it. I mean, who measures chocolate chips anyway? It seemed like enough when I mixed the batter.

Next, I got out my trusty muffin tin and lined it with some paper cups. I scooped the batter into each cup, filling them about two-thirds full. I popped the tray into the oven and set a timer for about 20 minutes, and waited. The smell in my kitchen started to get pretty good around the 15-minute mark. I couldn’t wait to try the muffins.
When the timer went off, I checked the muffins with a toothpick, and it came out clean. So I pulled the tray out and let the muffins cool for a few minutes before I tried one. They were still warm, and the chocolate chips were all melty and gooey.
Verdict?
They were actually pretty darn good. I mean, they’re not the best muffins I’ve ever had, but for something so easy, they were great. I think they’d be even better with some cream cheese frosting, but I didn’t have any on hand. Next time I make these, I’m going to add some walnuts or pecans too, I think that would make them even better. I also saw that some people like to use yogurt to make them moist, so I might try that too.
Overall, I’d say this recipe is a winner. It’s super easy, and the muffins are tasty. It’s perfect for a quick snack. I’d say that these muffins are good for lunchboxes or snack time.
