Okay, so I’ve always loved banana bread, but sometimes I end up with a bunch of bananas that get way too ripe, way too fast. You know, the ones that are practically black? Yeah, those. I used to just toss them, thinking they were beyond saving. What a waste! Then I learned this amazing trick: freezing them! Now I actually get excited when my bananas get super ripe because it means super flavorful banana bread is in my future.
Freezing the Bananas
First, I peel the overripe bananas. I used to try freezing them with the peels on, and let me tell you, it’s a nightmare trying to get the peels off later. They get all slimy and stuck. So, definitely peel them first.
Then I place the peeled bananas in a freezer-safe bag. You could also use a container, but I like bags because they take up less space. I usually squeeze out as much air as I can before sealing the bag, I think it prevents freezer burn.

That’s it! Just toss the bag in the freezer.I try to remember and label what they are for!
Making the Banana Bread
When I’m ready to bake,I’ll pull out the frozen bananas. I like to use at least three, I like it very banana-y.
Now, here’s the thing: you need to let them thaw. You can do this a few ways. Sometimes I leave them on the counter for a few hours. If I’m in a hurry, I put the bag in a bowl of warm water. Or, if I’m really impatient, I microwave them for a little bit, being careful not to actually cook them.
Once they’re thawed, they’ll be really mushy. Perfect! Just mash them up with a fork. Don’t be scared by the mushiness.
After that, I just follow my favorite banana bread recipe. I’m not gonna lie, sometimes I just use a boxed mix, and it still turns out amazing because of the frozen bananas!
- Mix in the wet ingredients, including those super-ripe, mashed bananas.
- Then add the dry ingredients.
- Pour it all into a loaf pan.
- And finally,bake!
The frozen bananas add so much moisture and intense banana flavor. It’s honestly the best banana bread I’ve ever had, and it’s all thanks to saving those “too ripe” bananas from the trash. I tell people all the time to try it!
