Okay, here’s my post about making potato soup in a crock pot, with cream cheese:
So, I tried this potato soup recipe in my crock pot the other day. It’s one of those “dump everything in and forget about it” deals, which is my kind of cooking. I grabbed a big bag of potatoes, some onions, and a block of cream cheese ’cause I heard it makes it super creamy.
First, I washed and peeled all those potatoes. It took forever! Then, I chopped them up into little cubes, nothing fancy. I diced up an onion too, and man, did my eyes water! I threw it all into the crock pot.

Next, I poured in some chicken broth. I just eyeballed it, enough to cover the potatoes. Some people use milk, but I went with broth. I sprinkled in some salt and pepper, and I think I added a little garlic powder too, ’cause, why not? I put the lid on, turned it on low, and just walked away.
I checked on it a few hours later, and the potatoes were all soft. This is where the cream cheese comes in. I cut the block into smaller chunks and tossed them in. It did not melt in a while, I realized maybe because the heat is not high enough. I thought I messed it up but I turned up to high heat and waited. I stirred it every now and then, and it finally started to melt and get all creamy. Success!
I ladled out a big bowl when it was all done. It was pretty thick, maybe even a little too thick in my opinion, but maybe it was because I didn’t follow others’ suggestions to use heavy cream instead of more milk, maybe next time I should try that. I added some shredded cheddar cheese on top and a dollop of sour cream. It was a good, hearty meal, perfect for a chilly day. I’ll probably make it again, maybe with a few tweaks here and there.
- Wash and peel potatoes
- Chop potatoes and dice onion
- Put them into crock pot
- Pour chicken broth, sprinkle salt, pepper, and garlic powder
- Turn on low heat and wait
- Cut cream cheese into chunks and toss in
- Turn on high heat until cheese melts
- Add cheese and sour cream on top
- Enjoy!
Lessons Learned
This was a pretty easy recipe, and I can see why people love it. Next time I will try to make it even creamier, also I think I will try different toppings.
