Okay, so I’ve been seeing this “souper rice” thing all over my feeds, and it looked pretty easy and tasty, so I decided to give it a shot. Let me tell you, it did NOT disappoint. Here’s how my little cooking adventure went:

Gathering the Goods

First things first, I needed to get my ingredients together. I didn’t follow any specific recipe, just kinda winged it based on what I had and what sounded good. I grabbed:

  • Rice: I used plain white rice, about a cup and a half, already cooked.
  • Broth: I had some chicken broth in the fridge, so I used that. Probably about 2 cups?
  • Veggies: I chopped up some carrots, celery, and an onion. I like my veggies, so I used a good amount.
  • Protein: I had some leftover cooked chicken, so I shredded that up.
  • Spices: Salt, pepper, garlic powder, and a little bit of dried thyme. Because, why not?

Throwing it All Together

I started by sautéing the veggies in a big pot with a little bit of olive oil. I just cooked them until they were soft, maybe 5-7 minutes. Don’t want them mushy, just, you know, cooked.

Then, I tossed in the shredded chicken and let that heat up with the veggies for a couple of minutes.

Next, the rice went in. I stirred it all up, making sure the rice got mixed in well with the veggies and chicken.

Finally, I poured in the chicken broth. I added enough to cover the rice and everything else, but not so much that it was super soupy. I wanted it to be more like a, well, souper rice, not actual soup.

The Simmer Down

I brought the whole thing to a simmer, then turned the heat down low, put a lid on the pot, and just let it sit there for about 15-20 minutes. I wanted all the flavors to get to know each other, you know?

Spice It Up

After the simmering, I took the lid off and gave it a taste. It was good, but needed a little something extra. So, I added my salt, pepper, garlic powder, and thyme. I just sprinkled it in until it tasted right to me. I’m a big fan of “measure with your heart” when it comes to spices.

The Final Result

And that was it! I let it sit for a few more minutes, just to make sure everything was heated through, and then I served it up. It was warm, comforting, and surprisingly flavorful for something I just kinda threw together. Definitely a win in my book! I will make the “souper rice” again, that’s for sure!
