Okay, here’s my experience making a peach cobbler with pancake mix:
So, the other day I was craving something sweet, and I had a bunch of peaches that were about to go bad. I remembered seeing something about making a cobbler with pancake mix, and I thought, “Why not?” I mean, I had a box of pancake mix just sitting in my pantry, collecting dust. Figured this was a good way to use it up.
Getting Started
First thing I did was grab that box of pancake mix. Then I needed some sugar and milk – pretty standard stuff. Oh, and butter, can’t forget the butter! I melted the butter in the baking dish first. Easy peasy.
Mixing it Up
Next, I mixed the pancake mix, sugar, and milk in a bowl. It was a bit lumpy at first, but I just kept stirring until it was mostly smooth. I poured this batter evenly over the melted butter in the dish. It felt a bit weird, pouring batter over butter, but I trusted the process.
Peach Time
Now for the star of the show – the peaches! I used canned peaches because that’s what I had. I sliced them up all nice. Then, I spooned the sliced peaches in these neat little lines over the pancake batter. Looked kinda pretty, actually.
Baking Adventure
I popped the whole thing in the oven, It took a while to bake, but the smell was amazing! My whole kitchen smelled like sweet, buttery peaches. Finally, it was golden brown and bubbly, and I knew it was done.
The Result
- Appearance: It looked really good! Golden brown on top, with the peaches peeking through.
- Taste: Honestly, it was delicious! The pancake mix made a surprisingly good crust – kinda fluffy and cake-like, but still with that cobbler vibe. And the peaches were all warm and gooey.
- Texture: The crust was soft, the peaches were tender, and the whole thing was just the right amount of sweet.
I let it cool a bit, but who am I kidding, I dug in while it was still warm. Served it up with a big scoop of vanilla ice cream. Best decision ever. It was a total win! It’s not like the cobblers that need a lot of time to prepare, which need to be prepared one day earlier. This thing is super easy and a great way to use up leftover pancake mix and peaches.
I will be making this again for sure, might even try it with different fruit next time. Maybe some apples and cinnamon! I really want to make the crust into a lattice shape next time, that would be great.
All in all, this pancake mix peach cobbler was a delightful surprise. It’s a keeper!
