Okay, so I’ve been seeing these “mounds cakes” all over the internet, and they looked SO good, and kinda easy? I decided to give it a shot, tweaking it a bit to use sweetened condensed milk because, well, I love that stuff.

First, I gathered my ingredients. I grabbed:

  • Some boxed chocolate cake mix (I just used what I had)
  • Eggs and oil, like the box said
  • A can of sweetened condensed milk (the star!)
  • A bag of shredded coconut
  • Some chocolate chips (because why not more chocolate?)

Mixing it UP

I followed the directions on the cake mix box, whisking together the mix, eggs, and oil in a big bowl. It looked like regular cake batter, nothing special yet.

Then, the fun part! I poured about half of the batter into a greased baking pan. I think it was 9×13, the usual size.

Now things got interesting. I mixed together, the coconut with almost the entire can of sweetened condensed milk in another bowl.I stirred it all up until, it was nice and combined.

Next, I spread the coconut mixture over the first layer of cake batter in the pan. It was kinda thick and gooey, but I managed to get it evenly distributed.

I gently spooned and spread the rest of the cake batter over the coconut layer, trying not to mix them too much. Then, because I’m extra, I sprinkled the chocolate chips on top.

I popped the pan into the oven, which I’d already preheated to…I think it was 350? Whatever the cake mix box said, really.I baked it for around 30-35 minutes, just until a toothpick stuck in the center came out clean.

It smelled AMAZING while it was baking. Seriously, the whole house was filled with this chocolate-coconutty goodness.

After letting it cool for a little bit, I cut myself a square. Oh. My. Goodness. It was SO moist and rich, thanks to that condensed milk, I think. The coconut layer was sweet and chewy, and the chocolate chips added that extra bit of chocolate flavor.

Honestly, I’m pretty proud of how it turned out! It was definitely easier than I expected, and the taste? Incredible. Next time, I might even try adding some chopped nuts, or maybe a layer of frosting. But even as it is, this mounds cake with sweetened condensed milk is a total winner in my book.
