Okay, so I’ve been seeing these recipes online using heavy cream instead of milk in pancakes, and I was like, “What? That sounds crazy rich… I gotta try it.” So, I did! And let me tell you, it was an experience.
The Experiment Begins
First, I grabbed my usual pancake ingredients. You know, the basics: flour, sugar, baking powder, salt, an egg… the usual suspects. But instead of reaching for the milk, I grabbed the heavy cream from the back of the fridge. I have to admit, I was a little nervous. This felt… decadent.
Mixing It Up
I whisked together the dry ingredients in one bowl, just like always. No changes there. Then, in a separate bowl, I combined the egg and the heavy cream. It looked so thick and creamy. I added a little vanilla extract, because why not? Everything’s better with vanilla.

Then came the moment of truth. I poured the wet ingredients into the dry ingredients and gently folded them together. The batter was noticeably thicker than usual. Like, really thick. I was a little worried it wouldn’t cook properly, but I pressed on.
Onto the Griddle
I heated up my trusty griddle and greased it with a little butter. Then, I scooped some of the thick batter onto the hot surface. They didn’t spread out as much as regular pancakes, so they were definitely going to be on the thicker side.

I flipped them after a few minutes, and they were beautifully golden brown. They took a little longer to cook through than usual, probably because of the thickness. I poked them with a spatula to make sure they were cooked all the way through.

Finally, it was time to eat! I stacked them up, drizzled some maple syrup on top, and added a pat of butter. And… wow. They were rich. Seriously, seriously rich. But also incredibly fluffy and tender. The texture was amazing – almost like a cake.
They were definitely different from regular pancakes. More dense, more decadent. I don’t think I could eat a whole stack of these, they were so filling! But as a special treat? Absolutely. They were delicious.
