Okay, so I’ve been hearing a lot about the “paleo” thing and this “AIP” variation, and honestly, it sounded kinda…intense. But my gut’s been a mess lately, and I’m willing to try almost anything. So, I decided to dive in and experiment with some “paleo AIP recipes.” Here’s how it went down.
Week 1: What Did I Get Myself Into?
First, I had to figure out what I could actually eat. No grains, no dairy, no legumes, no nightshades…it felt like everything was off-limits! I spent a good chunk of time just Googling “paleo AIP foods” and making a massive grocery list. I felt a bit overwhelmed, to be honest.
I stocked up on things like sweet potatoes, tons of leafy greens, coconut everything (milk, aminos, oil), and a bunch of meat and fish. I felt like I was prepping for the apocalypse, not a diet change.

Week 2: Kitchen Chaos
The first few recipes were…rough. Let’s just say I’m not a natural chef. I tried making some coconut chicken tenders, and they ended up…well, let’s just say, edible-ish.
- Attempt 1: Chicken too dry.
- Attempt 2: Forgot to add some herbs that make it not to test like grass.
- Attempt 3: Finally nailed it! (Mostly.)
I also experimented with a simple sweet potato and ground beef hash. That was a winner! Easy to make, and it actually tasted pretty good. I started to feel a little more confident.
Week 3: Finding My Groove
By the third week, I was starting to get the hang of it. I discovered that roasting vegetables is my new best friend. Toss some broccoli, carrots (AIP-friendly!), and onions with some coconut oil and herbs, and boom – delicious.
I also found a recipe for AIP-compliant “nomato” sauce (made with beets and carrots – who knew?). It wasn’t exactly like regular tomato sauce, but it did the trick on some zucchini noodles.
Week 4: Feeling…Better?
Okay, I’m not going to lie, it wasn’t easy. There were moments I craved a slice of pizza like nobody’s business. But, I have to admit, I started feeling…different. My stomach wasn’t as bloated, and I had a bit more energy. I realized that those recipes were truly friendly to my stomach.
Ongoing Experiment
I’m still figuring things out. I’m trying new recipes every week, and some are definitely better than others.
But I’m learning to listen to my body and see what works. It’s a journey, not a destination, right? And even, it is a long term plan for my health.
