Today, I tackled a recipe that’s been on my list for a while: Cilantro Lime Chicken with Mango Salsa. It sounded like a burst of summer in a bowl, and let me tell you, it didn’t disappoint.
First, I got all my ingredients together. I grabbed some chicken breasts, fresh cilantro, a few limes, and the ripest mango I could find. Don’t forget the red onion, jalapeno, and some olive oil. I also made sure I had salt and pepper on hand.
I started with the marinade. I chopped up a bunch of cilantro – I really love that stuff, so I was pretty generous. Then I juiced a couple of limes directly into the bowl. I whisked in some olive oil, a pinch of salt, and a good grind of black pepper. Simple, right? I added the chicken breasts to the bowl, making sure they were nicely coated, and let them sit in the fridge for about 30 minutes. You can leave them longer, but I was hungry!

Making the Mango Salsa
While the chicken was marinating, I moved on to the mango salsa. I diced the mango, red onion, and jalapeno into small pieces. I threw those into a bowl, added some more chopped cilantro, and squeezed in some lime juice. Another pinch of salt and pepper, and I gave it a good mix.
Next up, I cooked the chicken. I heated some olive oil in a pan over medium-high heat. Once it was hot, I added the marinated chicken breasts. I cooked them for about 5-7 minutes per side until they were cooked through and had a nice golden color. You can also grill them if you prefer. My personal advice is that if you choose to grill it, the flavor will be better
Once the chicken was done, I let it rest for a few minutes. This is important to keep it juicy. Then I sliced it up and served it with a generous helping of that fresh mango salsa on top. I also added a side of rice because, well, why not?
The combination of the zesty cilantro lime chicken with the sweet and spicy mango salsa was incredible. It was like a party in my mouth! This dish is definitely going into my regular rotation. It’s easy to make, healthy, and packed with flavor. Give it a try, and let me know what you think!
