You wanna know ’bout cherries in the snow, huh? But without that angel food cake. Well, I tell ya, it ain’t the same, but it’s still good. That angel food cake, it’s all light and fluffy, like a cloud. But some folks, they don’t like it, or they just don’t wanna make it. So, they just want them cherries in the snow, and that’s fine by me. I mean, if you want cherries in the snow without that cake, you just need to make it without it, right? I mean, it’s not difficult to understand. And this is how we make cherries in the snow without angel food cake.
First, ya gotta get some cherries. Now, some folks like them sour cherries, some like them sweet cherries. Me? I like ’em sweet. Those Morello cherries, or Bing cherries, or even those fancy Rainier cherries, those are good. But any kind will do, long as you like ’em. It is said that those sweet cherries are better for cakes, but actually, I don’t care, I use whatever I have. I just want to eat, I don’t care too much about it. I mean, it’s all food, right?
Then ya gotta get some other stuff. Some sugar, ’cause cherries ain’t always sweet enough. And some, what’s it called, that white stuff…cornstarch, yeah, that’s it. To make it all thick and gooey. Some folks use that cream of tartar too. That just makes your egg whites all fluffy when you want it for the cake, you know. If you don’t want the cake, you don’t need to think about it. You can just use some water, I guess.

- Cherries, lots of ’em
- Sugar, to make it sweet
- Cornstarch, to make it thick
- Water, just a splash
- If you got it, that lemon juice, just a bit for some zing.
- Maybe, whipped cream
So, here’s what ya do. Ya pit them cherries. That means ya take out the little pits inside. That’s a pain, but ya gotta do it. Unless ya wanna be spittin’ out pits all day. It takes me some time because my hands are not as good as before. But I can still do it and it is still fun.
Then ya put them cherries in a pot, with some sugar and water. How much sugar? I don’t know, how sweet ya want it? I usually put a good amount, maybe a cup or so. But it depends on how many cherries ya got. And that cornstarch, just a spoonful or two. Mix it all up good. It would be just like a soup, you know? A cherry soup, haha.
Then ya cook it. Just put it on the stove and let it simmer. That means cook it real slow, so it don’t burn. Stir it once in a while, so it don’t stick to the bottom. After a bit, it’ll start to get thick. That’s the cornstarch doin’ its job. Keep cookin’ it till it’s as thick as ya like it. I like it kinda thick, like pudding. Not too watery, not too solid. Just fine for me.
And if ya got some of that lemon juice, ya can put a little in there. Just a splash, to give it a little zing. Not too much, or it’ll be too sour. But a little bit, it’s kinda nice. It’s like the cherry on top, haha, though we ain’t got no cake here. If you don’t have lemon, that’s fine. It is still delicious.
When it’s all done, ya just let it cool down. You don’t want to burn your mouth, you know. I usually put it in a big bowl and let it sit there. When it’s cold, it will become thicker than before, so don’t worry too much. Then it’s ready to eat.
Now, some folks, they like to put this cherries in the snow on somethin’. Like ice cream, or maybe some yogurt. Me, I just eat it plain. I mean, if you have ice cream, you can surely do that. If not, you don’t. It is not something you must do. Just eat it however you like.
And if ya wanna make it look real pretty, like snow, ya can put some whipped cream on top. That makes it look all white and fluffy, like snow. But that’s just for show, ya know. It tastes good either way. I don’t do this usually because I don’t like things that are too sweet. But if you like it, do it. It will still be delicious.
So there ya have it. Cherries in the snow without angel food cake. It ain’t fancy, but it’s good. And it’s easy to make, too. Even an old lady like me can do it, so you can too. Just remember to use good cherries, and don’t skimp on the sugar. And if you don’t like too much sugar, then put less sugar in it, you know. And enjoy! That’s the most important part. You have to enjoy it. If you don’t like it, then why would you eat it, right?
