Okay, so I’ve been craving banana bread lately, but I didn’t have any baking mix. Then I remembered I had a box of pancake mix sitting in my pantry, and I thought, “Why not?” Turns out, it’s a pretty neat trick!

Getting Started

First, I grabbed my trusty mixing bowl and mashed up three ripe bananas. The riper, the better, you know? They get all sweet and mushy, perfect for banana bread. Then I cracked in two eggs and poured in about a third of a cup of milk. I just used regular whole milk, but I bet you could use any kind you like.

Next, I added a splash of vanilla extract. Just a little bit, maybe a teaspoon or so. After that, I dumped in about two cups of the pancake mix. I didn’t measure it super precisely, to be honest. I just eyeballed it until the batter looked about right. Oh, and I threw in a pinch of cinnamon, too, because banana bread without cinnamon is just sad.

Mixing and Baking

I stirred everything together until it was just combined. You don’t want to overmix it, or the bread will be tough. Once it was all mixed, I poured the batter into a greased loaf pan. You could probably use a muffin tin too, if you want to make banana muffins instead.

I popped the pan into a preheated oven at 350 degrees Fahrenheit. I think I baked it for about 50 minutes, but you might need to adjust the time depending on your oven. Just keep an eye on it and stick a toothpick in the center. If it comes out clean, you’re good to go.

The Result

And there you have it! The banana bread came out golden brown and smelling amazing. It was super moist and fluffy, and the pancake mix gave it a slightly different texture than traditional banana bread. It’s a little bit lighter, I’d say. It’s surprisingly tasty! This is definitely a good way to use up that extra pancake mix and satisfy your banana bread craving at the same time.

  • Pancake mix: 2 cups

I really enjoyed this little kitchen experiment. Next time I think I will use other kind of milk to see what happens. I’m super happy with how it all worked out, and I will do this again. You should give it a try!
