Okay, so I’ve been trying to eat a bit healthier lately, and I stumbled upon this recipe for coconut flour cottage cheese pancakes. In another bowl, I whisked together the eggs, cottage cheese, and vanilla extract. Then, I combined the wet and dry ingredients, stirring until they were just mixed. Honestly, they turned out better than I expected. They were fluffy, a little bit tangy from the cottage cheese, and had a nice hint of coconut. It is a good try for who wants to eat healthier. I might play around with the recipe a bit more next time, maybe add some cinnamon or try different toppings. But yeah, not bad for a first attempt.
