Okay, so I’ve been seeing these no-bake pies all over the internet, and I finally decided to give one a shot. I went with a blueberry cream cheese pie, mostly because I had a can of blueberry pie filling I wanted to use up. And, of course, it had to involve Cool Whip, because what’s a good no-bake pie without it?
First, I grabbed a pre-made graham cracker crust. I’m all about easy, and honestly, making a crust from scratch seemed like way too much work for a lazy Sunday afternoon. I’m sure it’d be better homemade, but whatever, this works fine.
Mixing It Up
- I softened a block of cream cheese. I just left it out on the counter for a while, until it was nice and squishy. You want it super soft so it mixes well.
- Then, in a big bowl, I beat the cream cheese with some sugar. I just eyeballed the sugar, maybe about half a cup? I like things a little less sweet, so you do you.
- Next, I folded in the Cool Whip. The whole container! Gotta get that fluffy, creamy texture. Gently does it, you don’t wanna deflate the Cool Whip.
- Once that was all combined, I spread about half of the mixture into the graham cracker crust.
Layering and Chilling
After the first layer of the creamy goodness, I dumped the can of blueberry pie filling on top. Spread that around evenly, and then covered it with the rest of the cream cheese mixture. I tried to make it look kinda pretty, but let’s be real, it’s a no-bake pie, not a work of art.

Then, into the fridge it went! I let it chill for at least 4 hours. This is important! You want it to set up nicely so it’s not a soupy mess when you try to cut it. I was watching the clock and I did take it out for about ten miniutes before putting it back in.
The Taste Test
Finally, it was time to dig in! I cut myself a big slice, and…it was pretty darn good! The creamy, tangy cream cheese with the sweet blueberries and that crunchy graham cracker crust…perfection! And so easy! I’m sure I add too much Cool Whip, but I’m not complaining.
Definitely making this again. Maybe next time I’ll try a different fruit. Or maybe chocolate…
