Okay, so I’ve been meaning to try out this pumpkin pancake thing for a while now, especially since fall is basically here and I’m all about that pumpkin spice life. I found this Kodiak mix at the store, and figured, why not? It’s supposed to be packed with protein, so that’s a plus.
I grabbed the Kodiak mix box – it was the birthday cake flavor, which I thought might be weird with pumpkin, but whatever, I was feeling adventurous. I also picked up some pumpkin puree, not the pie filling, just the plain stuff. I made sure I had some milk, eggs, and the usual pancake-making suspects at home.
Getting Started
First, I dumped about two and a half cups of the mix into a big bowl. Then, I cracked a couple of eggs in there. I poured in some milk – I didn’t really measure, just eyeballed it until it looked like the right consistency. I scooped in a good amount of the pumpkin puree, maybe like a cup or so? I love pumpkin, so I went a little heavy.

Mixing It Up
I grabbed a whisk and started mixing everything together. It was getting pretty thick, so I added a little more milk to thin it out. I also threw in some pumpkin pie spice because, you know, more is more when it comes to fall flavors. I mixed until it was all combined, but still a little lumpy – which is fine, you don’t want to overmix pancake batter.
Cooking Time
I heated up my griddle and greased it with some butter. Once it was hot, I ladled out the batter onto the griddle, making medium-sized pancakes. I let them cook for a few minutes on each side, flipping them when they started to bubble and the edges looked set. The smell in my kitchen was amazing – like a pumpkin spice candle, but edible.
The Taste Test
- The pancakes were fluffy and had a nice golden-brown color.
- The pumpkin flavor was definitely there, but not overpowering.
- The birthday cake mix added a hint of sweetness, which was actually pretty good.
- I topped them with some whipped cream and a sprinkle of cinnamon.
Honestly, these turned out way better than I expected. They were a fun and easy way to get into the fall spirit, and the extra protein from the Kodiak mix made them a little more filling than regular pancakes. I’d definitely make these again, maybe even try adding some chocolate chips next time. Who says you can’t have chocolate for breakfast?
