Okay, so, today I tried making blackberry cobbler, but with a twist – using cake mix! Yeah, sounds easy, right? And let me tell you, it kinda was.
Getting Started
First things first, I preheated my oven to 350 F. While that was going, I grabbed an 8-inch square baking dish and poured about half a cup of melted butter in there. I used unsalted butter ’cause that’s what I had, but I guess salted would work too.
Mixing the Good Stuff
Then, in a big bowl, I threw in my blackberries. I had a ton from my garden – seriously, those things grow like crazy. Added some sugar, a bit of cinnamon, and a dash of nutmeg. Gave it a good stir until everything looked all nice and coated.

Cake Mix Magic
Here’s where the cake mix comes in. So, I didn’t actually use a ready cake mix, I used self-rising flour instead. I mixed it with some milk and a bit more sugar in another bowl. I think the recipe called for all-purpose flour and baking powder, but hey, I like to improvise. It turned out a bit thick, but I just went with it. I poured this batter over the blackberries in the baking dish. I didn’t mix it, just let it sit on top.
Baking Time
I popped the dish into the oven and waited. The recipe said about an hour, but I checked it after 50 minutes, and it looked good. Golden brown on top, and the blackberries were all bubbly. It smelled amazing, by the way.
Cooling and Serving
I let it cool for a bit ’cause that filling was hot! Served it up with a scoop of vanilla ice cream. The combo of the warm cobbler and the cold ice cream was just perfect.
Final Thoughts
Honestly, it turned out pretty good for a first try. I noticed that the topping was a bit too moist in some parts. Maybe I used too many blackberries or not enough flour, I don’t know. And I guess I should have spread the batter more evenly, ’cause some parts were thicker than others. I used fresh berries but maybe next time, I’ll also try the canned ones. But hey, it was still delicious, and everyone loved it. Next time, I’ll probably tweak the recipe a bit, maybe add a little more flour and sugar to the batter. All in all, a fun little baking experiment!
- Lesson learned: Don’t be afraid to experiment, but maybe follow the recipe a bit closer next time.
- Tip: If the topping looks too wet, maybe sprinkle a bit more flour on top before baking.
So yeah, that was my adventure making blackberry cobbler with cake mix. Give it a try, and let me know how yours turns out!
