Okay, so, today I tried to make banana bread, but I didn’t have all the usual stuff. I found a box of protein pancake mix and thought, “Why not?” Let’s see how this goes.
Started with grabbing three really ripe bananas from the fruit bowl. I mashed them up in a big bowl until they were all gooey. Then, I cracked in two eggs – I used large ones because that’s what I had. I also poured in a bit of milk, about half a cup, just regular 2% milk.
After mixing all the wet ingredients together, I added the protein pancake mix. It said on the box, two scoops for pancakes, but I just dumped in about two cups for the bread. I stirred it all together, and honestly, it looked a bit like regular banana bread batter, maybe a little thicker.
I preheated the oven to 350 degrees Fahrenheit. While that was heating up, I greased a loaf pan with some butter. I poured the batter into the pan and spread it out evenly with a spatula.

When I sliced into it, it looked pretty good! It was moist, and it smelled like bananas. I took a bite, and it was actually tasty! It had that classic banana bread flavor, but maybe a little denser. I guess the protein pancake mix made it a bit heavier, but in a good way. It was pretty filling.

Overall, I’m calling this a win. Using protein pancake mix for banana bread worked out better than I expected. It’s a good way to use up old bananas and get a little extra protein in your snack. I’d definitely make this again, maybe try adding some nuts or chocolate chips next time.
