Okay, here’s my blog post about making strawberry basil cream cheese:

So, I saw this recipe floating around online for strawberry basil cream cheese, and I thought, “That sounds kinda weird…but also kinda good?” I’m a sucker for anything sweet and savory, so I figured I had to give it a shot. Plus, I had a bunch of strawberries about to go bad, and I hate wasting food.

First, I gathered my ingredients. It was pretty simple, just:

  • A block of cream cheese (I used the regular, full-fat kind, because, why not?).
  • A pint of strawberries.
  • Some fresh basil leaves.
  • A tiny drizzle of honey(Optional).

I started by taking the cream cheese out of the fridge. It’s way easier to work with when it’s softened, trust me. I learned that the hard way. While it was softening, I washed and hulled the strawberries. Then, I chopped them up into little pieces – not too small, I still wanted some chunks.

Next, I grabbed my basil.I like to use about six or seven,It all depends on your preference.I washed and removed the stems and chopped them, too.I love the smell of fresh basil.

Once the cream cheese was all soft and spreadable, I dumped it into a bowl. I added the strawberries and basil, and then I went in with my hands. Yeah, I know, some people might use a spoon or something, but I think it’s just easier to mix it all together with your hands. Plus, it’s kinda fun.

Optional:I like to add a tiny drizzle of honey for some more sweetness.

I mixed everything until it was all combined and looked pretty evenly distributed. You don’t want one giant clump of basil and all the strawberries on the other side. It took a bit of squishing and mashing, but it eventually came together.

And that was it! Seriously, it was so easy. I spread some on a toasted bagel, and oh man, it was delicious. The sweetness of the strawberries, the tang of the cream cheese, and that little herby kick from the basil…it was the perfect combo. My family also loved it.

I’ve also tried it on crackers, and it’s great that way too. I’m thinking it would even be good as a filling for little pastries or something. Gonna have to experiment with that next!

So yeah, if you’re looking for a super easy and surprisingly tasty spread, definitely give this strawberry basil cream cheese a try. It’s a winner in my book!
