Okay, here’s my take on making Golden Turmeric Coconut Chicken Soup, from start to finish, blog-style:
So, I’ve been seeing this golden turmeric coconut chicken soup all over the internet, and I finally decided to give it a shot. I’m all about warm, comforting meals, especially when the weather gets chilly, and this one looked both delicious and healthy. Here’s how it all went down.
Getting Started
First things first, I needed to gather my ingredients. I already had some basics like chicken broth, onions, and garlic. I made a quick trip to the store for the rest of items.

- Chicken breasts
- Coconut milk(full-fat, canned)
- Fresh ginger
- Turmeric(powder, of course)
- Lime
- Cilantro
- Some veggies, I chose carrots and spinach
The Cooking Process
Alright, time to get cooking! I started by chopping up the onion and garlic. Nothing fancy, just a rough chop. Then, I grated the ginger. I love the smell of fresh ginger, it’s so invigorating!
I heated up a bit of coconut oil in a big pot, then tossed in the onions and garlic. Once they were soft and fragrant, I added the ginger and turmeric powder. I let that cook for a minute or two, just to get the spices all toasty and aromatic. It’s important, the smell is amazing.
Next, I poured in the chicken broth and the coconut milk. I made sure to use full-fat coconut milk for that extra creaminess. I brought everything to a simmer, then added the chicken breasts. I just plopped them right in there, whole.
I let the chicken cook in the simmering soup for about 20 minutes, until it was cooked through. Then, I took the chicken out and shredded it with two forks. Super easy, and it makes it so much easier to eat in the soup.
Finishing Touches
With the chicken shredded, I added it back to the pot, along with the chopped carrots and spinach. I let that simmer for a few more minutes, just until the veggies were tender. Then added the chopped carrots and spinach
Finally, I squeezed in the juice of a lime and stirred in some chopped cilantro. The lime juice adds a nice zing, and the cilantro gives it that fresh, herby flavor. And that’s it! Soup’s on!
The Verdict
Honestly, this soup was even better than I expected. It was creamy, flavorful, and so comforting. The turmeric gave it a beautiful golden color, and the ginger and lime added a nice kick. Plus, it was pretty easy to make, which is always a win in my book. I’ll definitely be making this again!
