So, I wanted to make some banana bread the other day, but I was all out of flour. I was like, “What am I gonna do?” Then I remembered seeing this recipe online for a flourless peanut butter banana bread, and I thought, “Hey, I can do that!”

First, I preheated my oven to 350 degrees. While it was heating up, I got my loaf pan ready. I just sprayed it with some non-stick cooking spray, but you could also line it with parchment paper. That way, you could just lift the whole loaf out later – pretty smart, right?

Next, I grabbed three really ripe bananas. The riper, the better, I always say! I mashed them up in a big bowl with a fork until they were all mushy. Then, I dumped in a cup of peanut butter – I used the creamy kind, but crunchy would probably work too. I mixed that all together until it was nice and smooth.

After that, I cracked in two eggs and added a splash of vanilla extract. Oh, and a pinch of salt, too. Don’t forget the salt! I stirred everything up again until it was all combined. It was looking pretty good at this point!

Now, here’s where you can get creative. I threw in a handful of chocolate chips because, well, chocolate makes everything better. But you could add nuts, or dried fruit, or whatever you like. Get wild with it!

Then I poured the batter into my prepared loaf pan and spread it out evenly. If you wanna get fancy, you can slice up another banana and put the slices on top. It makes it look all professional and stuff. Just lay slices on the top – boom, done.

I baked it for about 30-40 minutes. You’ll know it’s done when a toothpick inserted into the center comes out clean. My kitchen smelled amazing while it was baking, by the way. Like, seriously good.

    Ingredients

  • 3 ripe bananas, mashed
  • 1 cup peanut butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: chocolate chips, nuts, etc.

Once it was done, I let it cool in the pan for a bit before trying to take it out. Then I sliced it up and dug in. And let me tell you, it was delicious! Super moist, peanut buttery, and just sweet enough. Even without flour! Who knew?
