Okay, let’s get started. I’ve been craving a good noodle soup lately, and I wanted something with a kick. So I decided to whip up a spicy coconut curry pork noodle soup. Here’s how it went down:
Getting Started
First, I gathered my ingredients. I didn’t have a super strict recipe, I mostly just winged it based on what I had and what sounded good.
- Pork – I used some leftover pork loin, but ground pork would be awesome too.
- Onion & Garlic – Gotta have those aromatics!
- Ginger – Fresh is best, but I only had ground.
- Red Curry Paste – This is where the magic happens.
- Coconut Milk – Full-fat, always.
- Broth – Chicken broth is what I had on hand.
- Noodles – I used some thin rice noodles.
- Veggies – I grabbed some carrots, bell peppers, and spinach.
- Lime, Cilantro, Fish Sauce – For that extra flavor punch at the end.
Cooking Time
I started by dicing up the onion and garlic. I browned the pork in a big pot with a little oil. Once the pork had some color, I tossed in the onion and garlic and cooked them until they were soft. Then, I added the ginger (about a teaspoon of ground ginger) and a heaping spoonful of red curry paste. I let that cook for a minute or two, just to get the flavors blooming.

Next, I poured in the coconut milk and chicken broth. I brought it all to a simmer and let it bubble away for a bit, maybe 10 minutes, to let the flavors meld together. While that was happening, I chopped up my veggies. I threw the carrots and bell peppers into the soup, since they take a little longer to cook.
Noodle Time!
Once the veggies were almost tender, I added the rice noodles straight into the pot. Be careful. I made a mistake to add too much noodles, just put little is * only take a few minutes to cook. Right at the end, I stirred in the spinach until it wilted.
Finishing Touches
The final step is all about balancing the flavors. I squeezed in the juice of half a lime, added a splash of fish sauce (don’t be scared, it adds so much depth!), and a handful of chopped cilantro. I tasted it and added a little more curry paste because I like it extra spicy.
The Result
This soup was exactly what I was craving! It was creamy, spicy, and packed with flavor. The pork was tender, the veggies were perfectly cooked, and the noodles were nice and slurpy. Next time, I might add some mushrooms or maybe even some tofu for extra protein.
