Today I am gonna make this super easy dessert called Eagle Brand Cherry O Cream Cheese Pie. I saw this recipe online and it looked pretty simple, so I figured, why not give it a shot?

First thing I did was grab the cream cheese out of the fridge. The recipe said to let it soften to room temperature. I have to admit I’m impatient and didn’t want to wait for the thing to soften up on its own. So, I just popped it in the microwave for a few seconds. Just a little bit, you know? You don’t want it melted.

Then I used my electric mixer to beat the cream cheese. I whipped it up until it was nice and fluffy. It was super satisfying to see it transform!

Next, I grabbed the can of sweetened condensed milk. I slowly poured it into the bowl with the cream cheese while the mixer was running. You gotta do it gradually so it combines properly. I mixed it all together until it was smooth and creamy.

  • Then it was time for the lemon juice. I squeezed in some fresh lemon juice, I think it gives it a nice little kick.
  • After that, I poured in a little bit of vanilla extract, just for some extra flavor.

I mixed everything together one last time, just to make sure it was all blended well.

Time to chill!

I already had a pre-made graham cracker crust that I bought from the store. I just poured the cream cheese mixture into the crust. Then I covered it up and stuck it in the fridge. The instructions said to chill it for at least 3 hours, but I was really hungry, so I might have checked on it every 30 minutes. Don’t judge me!

After a few hours, it was finally set. I took it out of the fridge and topped it with some cherry pie filling. I spread the cherries evenly over the top, and it looked so good! I couldn’t wait to dig in.

Finally, I cut myself a big slice and took a bite. Oh my gosh, it was amazing! The creamy cheesecake filling with the sweet and tart cherries, it was a perfect match. The crust was nice and crumbly, too. It was so easy to make, and it tasted like I spent hours in the kitchen. I’m definitely making this again!

I was proud of myself for trying this out. I learned that I can make some simple stuff on my own.
