Alright, folks, let’s talk food. Specifically, what to do when you’ve got some chicken and a block of cream cheese staring back at you from the fridge. I had that exact situation yesterday, and here’s how I tackled it.

First, I grabbed my chicken. I had some boneless, skinless breasts, about two of ’em. I threw them in a pot of water, just enough to cover, and added a little salt and pepper. You could totally use bone-in chicken, just adjust the cooking time. I brought that to a boil, then turned it down to a simmer until the chicken was cooked through. Took about 20-25 minutes.

While that was going, I took out my cream cheese to let it soften up a bit. Makes it way easier to work with. I also chopped up about half an onion, real fine. And because I like a little kick, I minced a jalapeno, too. Seeds and all – I like it spicy! If you don’t, scrape those seeds out.

I seasoned it with a little more salt and pepper, and because I love garlic, I added a good shake of garlic powder, too. You could use fresh garlic, of course, but I was going for quick and easy.

And that’s it! I served it up with some tortillas – we made little chicken tacos. You could also put it over rice, stuff it into baked potatoes, or even just eat it with a fork straight out of the pan (I might have done that a little…).
