So, the other day I got this wild idea in my head. I’ve been trying to cut back on regular flour, you know, and I had a bunch of coconut flour sitting in the pantry. And it hit me – can you actually make gravy with this stuff? I mean, gravy’s a staple, right? Especially with Thanksgiving and Christmas coming up, I gotta have my gravy. So, I decided to put it to the test.

First off, I grabbed my trusty cast iron skillet, the one I use for practically everything. I figured, might as well make a whole meal out of it, so I cooked up some chicken. I’m not sharing the chicken recipe, just the gravy part. As the chicken was finishing up, I got that delicious smell of those tasty pan drippings. You know, that’s the good stuff right there, the base for any decent gravy.

Once the chicken was done and resting, I took a good look at those drippings. There wasn’t a ton, but enough to work with. I sprinkled a couple of tablespoons of the coconut flour right into the skillet, then i start to whisk it.

Now, I gotta tell ya, coconut flour is way different than regular flour. It’s super absorbent. Like, crazy absorbent. So, as I was whisking, the mixture got thick really, really fast. I added some chicken broth, a little at a time, whisking like a madman the whole time.

  • Slowly add broth while continuing to whisk
  • Keep whisking until you reach the desired consistency

It took a bit of experimenting to get the consistency right. I probably added more broth than I would have with regular flour. But eventually, I got there. A nice, smooth, not-too-thick, not-too-thin gravy.

I seasoned it up with some salt, pepper, and a pinch of herbs from my little window garden. Gave it a good stir, and then the moment of truth – the taste test.

And you know what? It wasn’t half bad! It definitely had a hint of coconut, which I actually liked. It wasn’t exactly like traditional gravy, but it was pretty darn close. It was rich, flavorful, and it coated the chicken perfectly. I even made some biscuits. I poured the gravy over those biscuits, and man, it was good.

So, can you make gravy with coconut flour? Heck yeah, you can! It might take a little tweaking and a bit more liquid, but it’s totally doable. And hey, if you’re looking for a gluten-free or just a different kind of gravy, this is definitely worth a shot. It’s a keeper in my book! I made it!
