Okay, so I saw this recipe for 3-ingredient strawberry cake cookies floating around, and I was like, “No way, that’s gotta be too good to be true.” But my sweet tooth was calling, and I’m all about easy baking, so I had to try it.
Gathering My Stuff
First things first, I grabbed the ingredients. Seriously, just three things:
- One box of strawberry cake mix (I used the one with the little strawberry bits in it, because, why not?)
- One 8-ounce container of Cool Whip, thawed (make sure it’s not still frozen, or it won’t mix right).
- One egg. Just one!
Mixing It Up
I preheated my oven to 350°F .Then, in a big bowl, I dumped in the cake mix, the Cool Whip, and the egg. I used a big spoon to stir it all together. At first, it looked kinda weird, like the Cool Whip and cake mix weren’t going to cooperate. But I just kept stirring, and eventually, it all came together into a pretty pink, sticky dough.

Baking Time!
I grabbed a cookie sheet(lined with parchment paper to prevent sticking, which is super important) . I used a spoon to drop rounded balls of dough onto the sheet, I made sure that leave some space between each one because they spread out a bit while baking.
Then, I popped the cookie sheet into the oven and baked them for about 9-12 minutes.I started to checking them at 9 minutes,because my oven sometimes runs a little hot. You want the edges to be just slightly golden brown.
The Big Reveal
I pulled the cookies out of the oven and let them cool on the baking sheet for a few minutes before moving them to a wire rack to cool completely. They were super soft and fluffy, almost like little cake pillows. And the strawberry flavor? So good!
Honestly, I was shocked at how well these turned out. Three ingredients, and you get these amazing, soft, strawberry cookies. It’s like magic! I definitely recommend giving these a try if you’re looking for a super easy and tasty treat. My family devoured them!
