So, I tried making these banana almond butter oatmeal cookies the other day, and let me tell you, they turned out pretty good! I found this recipe that only needed four things – bananas, almond butter, oats, and some mini chocolate chips. I’m always looking for easy snacks to make ahead of time, and these cookies seemed perfect for that.

First, I grabbed a couple of baking sheets and lined them with parchment paper. Then, I got three mixing bowls, a spatula, and a whisk ready. I also made sure I had my ice cream scoop on hand because it’s great for portioning out the dough.

In one bowl, I mashed up the bananas. I like my bananas pretty ripe for this because they’re sweeter and easier to mash. Then, in another bowl, I mixed the almond butter with the mashed bananas. You gotta make sure it’s all mixed up really well, no lumps!

Next, I slowly added the oats to the banana and almond butter mixture. I did this a little at a time, stirring as I went, to make sure everything was evenly combined. I used my ice cream scoop to drop spoonfuls of the cookie dough onto the prepared baking sheets. They don’t spread much while baking, so you can put them fairly close together. I baked them in the oven, and after they cooled down a bit, I couldn’t resist trying one. They were delicious – a little chewy, a little sweet, and just the right amount of chocolatey.

I ended up making a big batch and snacking on them throughout the week. They’re a great little treat whenever you need a quick energy boost. I might experiment with adding some nuts or different kinds of chips next time. Overall, this was a fun little baking experiment that I’ll definitely be doing again!
