Okay, so this weekend I was feeling adventurous in the kitchen and decided to tackle a Baileys Irish Cream French Toast Casserole. I’d seen some recipes floating around, and, you know, Baileys makes everything better, right?
Getting Started
First, I gathered all my ingredients. I mean, who wants to run to the store mid-recipe? Not me.
- A loaf of bread (I used challah because it’s kinda fancy and soaks up stuff well)
- Eggs (like, a lot – 6 of them)
- Milk (about 1 1/2 cups)
- Heavy cream (1/2 cup, because we’re going all out)
- Baileys Irish Cream (the star of the show! I used about 1/2 cup, maybe a little more…don’t judge)
- Sugar (1/4 cup for the batter, plus some for sprinkling)
- Vanilla extract (a splash, for that warm flavor)
- Cinnamon and nutmeg (because it’s French toast, duh!)
- Butter (for greasing the pan and for the streusel topping, if you’re feeling extra)
The Process
I started by cubing the bread. I just ripped it into bite-sized pieces – nothing fancy. Then, I whisked together the eggs, milk, heavy cream, Baileys, sugar, vanilla, cinnamon, and nutmeg in a big bowl. It smelled amazing already!

Next, I greased a baking dish with butter. I mean, REALLY greased it. No sticking allowed! Then, I tossed the bread cubes into the egg mixture, making sure they were all nicely coated. I let it sit for a bit, maybe 15 minutes, just to soak up all that goodness, then transfer everything to the pan.
If you use streusel, mixed some flour, brown sugar, cinnamon, and cold butter until it was crumbly, then sprinkled it over the top.
Baking and Enjoying
I popped the casserole into a preheated oven (350°F, I think) and baked it for about 45 minutes, until it was golden brown and puffy. The whole house smelled like a boozy bakery – it was heavenly.
Once it was out of the oven, I let it cool for a few minutes before slicing and serving. I drizzled some extra Baileys over the top because…why not? And there you have it! Baileys Irish Cream French Toast Casserole. It was rich, decadent, and totally worth the effort. Definitely a weekend brunch winner!
