Okay, so I’ve been seeing this “fyrstekake” thing all over my food blogs, and it looked so darn good, I just had to try it. It’s like, a Norwegian almond cake, and who doesn’t love almonds? So, I dug up a recipe and decided to give it a whirl.

Getting Started

First things first, I gathered all my ingredients. This is important, people! Nobody wants to be halfway through a recipe and realize they’re out of, like, baking powder. Trust me, been there, done that. It’s not fun.

For making the dough, I grabbed:

  • All-purpose Flour
  • Sugar
  • Baking powder
  • A pinch of salt
  • Butter(Cold, cold, cold!)
  • An egg
  • Some water

For that yummy almond filling, I needed:

  • Almonds (duh)
  • Sugar
  • Egg whites
  • A dash of cardamon,because it is a must.

The Dough Hustle

I mixed the dry stuff first – flour, sugar, baking powder, and salt. Then, I grabbed my pastry cutter (you can use a fork, but the pastry cutter is way faster) and cut in that cold butter. It looked like coarse crumbs when I was done, which is exactly what we want. After that I added some cold water and egg. I mixed just untill everything was combined.

Filling Frenzy

The filling was a bit trickier. First, I had to use Food processer to crush my almonds. I dumped them into my food processor and pulsed until they were fine.

Then, I whisked the egg whites until they were kinda frothy, and slowly added the sugar, whisking all the while. Finally, I folded in the ground almonds and cardamom.

Putting It All Together

Then get the dough out and, gently roll it out on the floured surface.

I carefully transferred the dough to my pie plate. I poured the almond filling, and make it even.

Bake and Wait (The Hardest Part!)

I popped the cake into a preheated oven. I baked it for about 40 minutes, but I kept an eye on it – every oven is different, you know? It was ready when it was golden brown and the filling looked set.

Finally the cake was ready, I took it out, and the smell in my kitchen was just amazing.

And that’s it! My first fyrstekake. It was a bit of work, but totally worth it. If you’re looking for a slightly different, super delicious cake, you gotta try this one. Next time, I might even try adding a little almond extract to the filling for an extra almondy punch. Happy baking, everyone!
