Okay, so I’ve been craving dill gravy lately. Like, really craving it. It’s that perfect comfort food, you know? So, I decided to finally make some from scratch. I’ve messed around with recipes before, but this time I wanted to nail it. Here’s how it went down:
First, I gathered all my stuff. I’m talking:
- Butter (like, half a stick, don’t judge)
- Flour (just regular all-purpose)
- Milk (whole milk is the best for this, trust me)
- Chicken broth (I used the low-sodium kind)
- Fresh dill (lots of it!)
- Salt and pepper (duh)
- A little bit of lemon juice (this is my secret weapon)
I started by melting the butter in a saucepan over medium heat. I didn’t want it to brown, just get all melty and nice. Then, I sprinkled in the flour, a little at a time, whisking like crazy. You gotta keep whisking to avoid those nasty flour clumps. Nobody wants lumpy gravy.

Once the flour and butter were all mixed together, it looked like a thick paste. That’s what you want. I cooked that for a minute or two, just to get rid of that raw flour taste. I don’t know that is a word or not, just keep going!
Next, I slowly poured in the milk, still whisking non-stop. Then I added the chicken broth, same deal – slow and steady, whisk, whisk, whisk. I brought the whole thing to a simmer, letting it bubble gently.
I kept stirring it every now and then, and it started to thicken up. This took maybe 10 minutes? I wasn’t really timing it, just going by feel. When it was thick enough to coat the back of a spoon, I knew it was close.
Then came the best part – the dill! I chopped up a big handful of fresh dill and stirred it in. Oh, and I added a good pinch of salt and pepper, too. You gotta taste and adjust, taste and adjust. That’s the key to good cooking.
Finally, I squeezed in just a tiny bit of lemon juice. Seriously, just a little! It brightens up the whole thing and makes the dill flavor pop. It is amazing!
I let it all simmer together for another minute or two, just to let the flavors get to know each other. And that was it! Perfect, creamy, dill-icious gravy.
Final Result
I poured that glorious gravy over some mashed potatoes, and it was heaven. Seriously, you guys have to try this. It’s so easy, and so much better than anything you can get from a packet. Make sure you have enough ingredients. Good luck!
