Okay, so I’ve been trying to be a little healthier lately, and that means cutting back on the sweets. But, ugh, I have such a sweet tooth! I stumbled upon this recipe for a “Weight Watchers” Pineapple Angel Food Cake, and figured, why not give it a shot? It seemed too good to be true, honestly.
Getting Started
First things first, I gathered my ingredients. It was shockingly simple: just a box of angel food cake mix and a can of crushed pineapple (in its own juice, not the heavy syrup stuff). That’s it! Two ingredients. I was already feeling pretty good about this.
Mixing it Up
Next, I dumped the cake mix into a big bowl. Then, I poured in the entire can of crushed pineapple, juice and all. I didn’t add any water or eggs or oil, nothing else. Just those two things. The instructions said to mix it really, really well, until everything was good and combined. It looked a little weird at first, kind of foamy and bubbly, but I just kept stirring.

Baking Time
I preheated my oven to 350 degrees Fahrenheit, just like the box of cake mix said. Then, I poured the batter into an ungreased tube pan. I have this old one that my grandma gave me, and it always works perfectly for angel food cake. I gently spread it into a pan and baked for 30 minutes.
The Waiting Game
The hardest part was waiting for it to bake! My kitchen started to smell amazing, like sweet pineapple and warm cake. I peeked through the oven door a few times (I know, I know, you’re not supposed to, but I couldn’t help myself!).
Cooling and Enjoying
Once the cake was golden brown and a toothpick inserted into the center came out clean, I took it out of the oven. I immediately flipped the pan upside down onto a wire rack, which is super important for angel food cake so it doesn’t collapse. I let it cool completely, which took about an hour (torture!).
Finally, I ran a knife around the edges of the pan and gently removed the cake. And there it was! A perfectly fluffy, golden-brown angel food cake. I sliced myself a piece, and…wow. It was actually really good! It was light and airy, with a nice sweet pineapple flavor. It definitely satisfied my sweet craving, and I didn’t feel guilty about eating it.
So, yeah, this two-ingredient Pineapple Angel Food Cake is a winner in my book. Super easy, pretty healthy (as far as cakes go!), and delicious. I’ll definitely be making this again!
