Okay, so I’ve been trying to be a bit healthier lately, and I stumbled upon this recipe for “Weight Watchers Angel Food Pineapple Cake.” It sounded too good to be true – only two ingredients? Seriously? I had to try it.
Getting Started
First things first, I grabbed the stuff I needed:
- One box of angel food cake mix. Any brand works, I just got the store brand.
- One 20-ounce can of crushed pineapple in juice, not the heavy syrup kind. This is important!
Mixing It Up
I preheated my oven to 350°F (175°C) because, you know, baking 101. Then, I dumped the cake mix into a big bowl. No sifting, no fuss. Next, I poured in the entire can of crushed pineapple, juice and all. Don’t drain it! The juice is what helps make the magic happen.

I grabbed a spatula and started mixing it all together. It looked a little weird at first, kind of frothy and bubbly. I just kept folding it gently until it was all combined. The batter was surprisingly thick, not like regular cake batter at all.
Baking Time
I poured the batter into a 9×13 inch baking pan. I didn’t grease it or anything, because angel food cake usually sticks to the pan, and that’s okay. It helps it keep its shape. I popped it in the oven and set the timer for 30 minutes.
While It baked I started to clean up my small mess in the kitchen.
The Waiting Game
While it was baking, my kitchen started to smell amazing, like a tropical vacation. I kept peeking through the oven door, and it rose up nicely, all golden brown on top.
Once my timer went off, I pulled the Cake out of the oven.
Cooling and Serving
I let it cool completely in the pan. This is super important for angel food cake, or it might collapse. Once it was cool, I ran a knife around the edges to loosen it and flipped it out onto a plate.
I sliced myself a piece, and wow! It was so light and fluffy, with a sweet pineapple flavor. It definitely didn’t taste like “diet” food. My family even liked it, and they’re usually picky about healthy desserts. I topped my with some fat free whipped cream.
So, yeah, this two-ingredient angel food pineapple cake is a total win. It’s easy, delicious, and relatively guilt-free. I’ll definitely be making this one again!
