It looked pretty good, if I do say so myself.

But I didn’t stop there. I had some leftover strawberries, and I remembered reading somewhere that strawberries go well with basil and balsamic vinegar. So, I thought, let’s give it a shot! I tossed the strawberries with a bit of sugar and a tablespoon of balsamic vinegar. I let them sit and do their thing for a while—you know, marinate. Then I chopped up some basil leaves real thin and sprinkled them on top. It was a weird combo, but hey, it worked! A nice little snack, that’s for sure.

And then, I remembered I had a bag of frozen strawberries in the freezer. I usually just use them for smoothies, but today, I wanted to try something different. I took them out and let them thaw a bit. I thought about what I could do with them, and then it hit me—pancakes! I whipped up a quick pancake batter, threw in some of those thawed strawberries, and cooked them up. Man, they were good! The strawberries added a nice burst of flavor to the pancakes.

I also tried adding some of the thawed strawberries to my morning yogurt. It was a simple change, but it made my usual breakfast a whole lot better. I even thought about making some homemade ice cream with the rest of the frozen strawberries, but I ran out of time. Maybe next time!

So yeah, that was my day messing around with strawberries and cream cheese. I made some cookie sandwiches, a weird but tasty basil-strawberry snack, and some killer strawberry pancakes.
