Okay, so I’ve been craving some pumpkin pancakes lately. I mean, who doesn’t love a good stack of pancakes, right? But I wanted to try something a little different this time, something with that fall flavor. So, I figured, why not try making pumpkin pancakes using pancake mix? It seemed easy enough, and I had a box of pancake mix sitting in my pantry just waiting to be used.
Getting Started
First things first, I grabbed a medium-sized bowl from my cupboard. Then, I opened up the box of pancake mix and measured out 3 cups of it. I dumped the mix into the bowl. Next, I grabbed a jug of cold water from the fridge and measured out 3 cups of it as well. I poured the water into the bowl with the pancake mix.
Mixing It Up
Now came the fun part – mixing! I took a whisk and started to blend the pancake mix and water together. I whisked everything until it was nice and smooth, making sure there weren’t any big lumps of dry mix left. It took a bit of elbow grease, but I got there in the end.

Adding the Pumpkin
- I got myself a can of pumpkin puree
- Then I put in a cup of it into the bowl
- Then I stirred it all together
Of course, they wouldn’t be pumpkin pancakes without some actual pumpkin, right? So, I opened a can of pumpkin puree. I scooped about a cup of it and added into the bowl. I grabbed a spatula and mixed everything together. I tried to mix evenly until the pumpkin puree was fully incorporated into the batter.
Spicing Things Up
I sprinkled in a teaspoon of cinnamon, a half teaspoon of nutmeg, and a pinch of cloves. After that I gave the batter a good stir to make sure the spices were evenly distributed.
Cooking Time
With the batter all ready to go, it was time to start cooking. I heated up my griddle over medium heat and greased it lightly with some butter. Once the griddle was hot, I used a 1/4 cup measuring cup to scoop out the batter and poured it onto the hot surface.
I cooked the pancakes for about 2-3 minutes on each side, until they were golden brown and cooked through. I flipped them carefully with a spatula, making sure not to splash any batter around. Then repeated the process until all the batter was used up, making a nice big stack of pumpkin pancakes.
The Final Result
Finally, I stacked the pancakes on a plate, drizzled them with some maple syrup, and added a dollop of whipped cream on top. And let me tell you, they were absolutely delicious! The pumpkin flavor was subtle but definitely there, and the spices added a nice warm touch. They were fluffy, flavorful, and the perfect fall breakfast treat.
